School Night Dinner

Preschool and Ballet classes are back in session and I’m on the hunt for quick dinners. If it was up to hubby we’d be eating out every night but I am on a mission to keep take out to a minimum this year. I need something quick and nutritious to prepare for dinner, and when I come home late I am in no mood to make a 4 course meal. I checked out the freezer and found a bag of  Tyson’s Grilled Chicken Strips and I instantly new I could work with these. I started by sauteing the strips and added 3 local red peppers that I had in the fridge. Let everything saute till the chicken is soft and the peppers still have a crunch (about 7 mins)

Meanwhile, I was rummaging through the cupboards looking for a side. My family lives on Whole Wheat pasta and there was no way I was eating it another night. I did however find 2 packages of Uncle Ben’s 90 second Brown Rice. I heated both packages and added it directly to the chicken/pepper mixture.

 

To add flavor and bind everything together, I added Garlic Powder, Onion Powder, Basil and Crushed Tomatoes (just enough to coat everything).

To my surprise, the WHOLE family loved it and I had no leftovers. Dinner was made in 15 minutes and we all had happy bellies : ) Hope you’re all enjoying your back to school ventures and not spending dinnertime in the drive through!

    Love this! We are so busy with school, football practice and work. I am running out of quick healthy things to make. I’m so going to try this! I love the Uncle Ben’s Ready Rice too!
