Summer Influenced Lemon Pepper Chicken
I love Fall with its cool days and crisp nights, I even look forward to the winter months (mostly because of the Holidays and food!) but after we ring in the New Year I’m ready for grills, flip flops and long summer nights. Once I pack up my holiday decor the urge for warm weather starts to take its toll. The weather here in Central PA has been cold and moody this year! Last night we received some snow/ice. Tonight, I decided to bring the summer indoors! I cranked up the heat and fired up the grill- well, not quite. I plugged in the grill : )
My kitchen is mostly outdoors in the summer, I live for the outdoors and I think everything tastes better cooked outside. One of my family’s favorites is grilled Chicken Breasts. It’s easy, low fat and tasty. It can be difficult to keep Chicken different and interesting, one of my favorites is Lemon Pepper Chicken.
The citrus adds a crisp refreshing flavor and can be paired with almost anything. Forget about the bottled seasoning, using fresh ingredients adds a much more depth to the Chicken plus you have control of the salt! Extra Virgin Olive Oil, fresh cracked pepper, lemon, and Sea Salt are the only ingredients needed.
Start by drizzling Extra Virgin Olive Oil and liberally salting the Chicken on both sides. 
Grate the zest of 1 lemon (make sure you grate only the yellow part of the skin, the white is bitter) 
Finally, add lots of fresh cracked pepper!
Cover and marinate for at least 1/2 hour. The smell of the zest and fresh pepper was so crisp and refreshing, I love when a few simple ingredients can create something so good! : )
If you’re brave enough to battle the elements a gas grill can be used but like I said I was bringing the summer to me! I preheated my George Foreman Grill (a lifesaver in the winter!) and grilled the Chicken for 7 mins. 
I paired the Chicken with a bed of Baby Spinach and roasted White and Sweet Potatoes, very filling and nutrient packed!
Summer might be a couple months away but this gave me a glimpse of what’s to come and to forget about the icy cold weather outside : )

Thanks Amy! As for the Sweet Potatoes, I’m one of those weird people that don’t like my Sweet Potatoes like candy with all the marshmallows and whatnot. I just roast them like I do white potatoes, Olive Oil, Sea Salt, Garlic Powder, and Italian Seasonings- bake at 400 degrees for 45 mins. they’re really good, even the kids like them! : )
